Using Sonata ‘00’ pizza flour alongside our 24-hour preferment process, we’ve created bases with real character, balance and flavour. Crisp where they should be, soft where it matters, and designed to perform consistently in busy kitchens with maximum ease of use and will work in any pizza oven, can also be cooked in a Rational Oven.

Base:

Wheat flour (Wheat flour, Calcium Carbonate, Niacin, Iron, Folic Acid, Thiamin), Water, Salt, Yeast, Flour Improver (E300), Deactivated Yeast.

Tomato sauce:

Tomato, Olive Oil, Tomato Puree, Salt, Sugar, Black Pepper, Fresh Basil.
